These sultana and carrot muffins make the most of your Kuvings Blender by mixing all of the ingredients in the blender for you to pour into your muffin mould. They are dense, but surprisingly moist.

Vegan & Healthy

They will make a great lunch box filler or a nice treat with a cup of tea/coffee. They are not super sweet, so I’ve added a delicious plant-based icing. But equally, you can serve them warm with a scoop of icecream and a drizzle of maple syrup


Ingredients (makes 12)

  • 3 cups rolled oats 
  • 3/4 cup raw pepitas (pumpkin seeds)
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 2 cups water
  • 1 cup shredded carrot
  • 1 cup sultanas

Simply add all of these ingredients to your Kuvings SV500 Vacuum Blender and blend.


  1. Preheat the oven to 350°F (180°C). Wipe coconut oil around your 12 cup muffin tin.
  2. Place oats, pepitas, maple, vanilla, salt, baking soda, spices, water to your blender and blend on Auto until mixed into a smooth batter.
  3. Scrape into a mixing bowl and fold in your grated carrot and sultanas until well combined.
  4. Spoon the mixture into the prepared muffin tin.
  5. Bake for 20-25 minutes until golden brown or until a toothpick comes out mostly clean.
  6. Transfer to a wire rack to cool, then serve.
  7. Frost the top with Cashew Cream Icing (recipe below) and add a pecan to the top

We used the Kuvings Silicone Muffin Pan – safe, sustainable cooking!

They will remain fresh and moist in a sealed container in the fridge for about a week.

Ingredients (make 250ml)

  • 1 cup raw cashews (soaked overnight or in warm water for 2 hours)
  • 1/4 cup maple syrup
  • 1/4-1/2 cup plant-based milk
  • 1/2 tbsp coconut oil
  • 1 tsp vanilla extract


  1. Drain cashews and add to blender jug
  2. Add the rest of the ingredients to the blender jug and blend on auto until smooth and creamy
  3. Use as frosting on your sultana and carrot muffins (or as a dip for fruits, or drizzle over grilled banana for a quick and easy dessert)

This frosting works well when cold, place into fridge/freezer to solidify a bit more before using.
