A simple way to get some greens in! Packed with good nutrition, this Spinach Pesto tastes amazing and can be used in a pasta, on a baked spud or dolloped on a salad. It’s super versatile.

We paired it with some Spaghetti Squash (which was cut in half and baked in the oven for 30-45mins), then scooped the flesh out and added some tomatoes, pesto and micro herbs – fully plant-based and simply delicious!

Leafy Greens

There are so many reasons to get more leafy greens into your diet. They help clean up our blood, boost our immune system and are just great for all sorts of ailments. If you want optimum health, it’s good to eat 2 cups of leafy greens per day. They are packed full of calcium, iron and vitamins A, B9 & C.

Pumpkin Seeds

Pepitas are a really good source of magnesium and zinc. Both of these are so critical to our health, they help us sleep better and snacking on pumpkin seeds each day will give your body vital micronutrients and antioxidants. Magnesium helps our heart and helps to lower blood pressure, while zinc is great for our immune system and helps our eye and skin health. Pumpkin Seeds are one of the best known natural sources of B vitamins to help reduce bad cholesterol in the blood. They are so easy to eat, add them to salads, soups or simply eat a handful a day!

Ingredients (makes 1 cup)

  • ½ cup pepitas
  • 2 cups spinach*
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 8 sundried tomatoes
  • ¼ cup extra virgin olive oil
  • Salt/pepper as desired

  • Put all of your ingredients into the jug

Step 2: Blend all together in your Kuvings Vacuum Blender

  • Place the lid on the jug and the noise-reduction cover on
  • Touch ‘power on’ button
  • Select vacuum blend or auto blend button
  • Let the Blender do its thing.
  • Scrape down the sides with a spatula and blend more if required
