- This vegan mushroom pâté, a culinary masterpiece inspired by the innovative recipes of Shannon Martinez, chef at Smith & Daughters – is ridiculously delicious!

It is from the ‘Vegan Eats’ cookbook and delivers a luxurious texture and depth of flavour that will delight your taste buds. Perfect for spreading on crusty bread or crackers, this pâté is sure to impress even the most discerning palates.

Ingredients

- 250g firm tofu, cut into 8 pieces
- 1 fresh bay leaf
- vegetable stock (about 2 cups)*
- 1 tbsp B-Mite*
- 60mL (1/4 cup) olive oil
- 1 onion, chopped
- 2 large garlic cloves, crushed
- 50g (1/2 cup) pecans (or walnuts), roughly chopped
- 15g (1/2 cup) dried porcini mushrooms, soaked in 125 ml (1/2 cup) warm water
- 440g button mushrooms, roughly chopped
- 1 tsp thyme leaves, plus extra sprigs, for garnish
- 60mL (1/4 cup) brandy**
- 2 tbsp soy sauce
- 1 tbsp white truffle oil
- 1 tsp lemon juice***
- melted (vegan) butter, to cover
- toasted bread slices, to serve

Method:

Place the tofu, bay leaf, and enough stock to cover in a large saucepan. Bring to a boil, then reduce the heat and simmer on low for 5 minutes. Drain the tofu and press with paper towel for about 10 minutes to remove excess liquid.

Heat the oil in a frying pan over medium heat. Add the onion and cook, stirring frequently, until caramelized, about 5 minutes. Add the garlic and pecans, and continue to cook for a further 2 minutes.

Strain the porcini mushrooms and set aside the liquid. Add the porcini and button mushrooms to the pan along with the thyme, cook for a few minutes then deglaze the pan with Brandy.

Add 80mL (1/3 cup) of the dried mushroom soaking liquid and cook until completely reduced. Season well with salt and pepper.

Transfer the ingredients to a blender and add the soy sauce, truffle oil, and lemon juice. Blend until completely smooth.

Fill ramekins nearly to the top with pâté, cover with melted butter, and add a thyme sprig.

Set aside in the fridge for at least 2 hours to firm up.

Serve the pâté with slices of toasted baguette for a delightful appetizer or snack.

Increasing your intake of raw foods rich in iron is the best way I know to naturally increase your iron levels. Most people don’t sit down to eat a whole bunch of raw spinach or a whole bunch of raw parsley. You can however easily consume it all, in one, easy to digest, cold-pressed juice.

- Introducing our delectable Beetroot Brownie, a delightful twist on a classic treat! This recipe combines the earthy sweetness of steamed beetroot with the rich, indulgent flavours of vegan dark chocolate. Ground almonds add a nutty depth, while maple syrup and vanilla essence provide natural sweetness and aroma.

What sets this brownie apart is its unique texture: soft and gooey in the middle, with a satisfying crunch on top. Perfect for a guilt-free indulgence or a special treat, this Beetroot Brownie is sure to impress. Made easily in the Kuvings Nutri Blender.

Ingredients (makes 10-12 squares)

250g beetroot cooked (steamed, vacuum packed is great to use)
1 cup almond meal*
¼ cup coconut oil
½ cup maple syrup
½ cup melted vegan dark chocolate**
1 tbsp cacao***
1 tbsp cacao nibs (optional)
1 tsp baking powder
1 tsp vanilla essence
pinch salt

Method:

Preheat the oven to 190ºC (375ºF) and line an 8-inch square baking tin with parchment paper.

In a small bowl, mix the coconut oil into the melted dark chocolate, stirring until fully dissolved.

In a blender, combine the steamed beetroot, ground almonds, melted chocolate, maple syrup, cacao powder, baking powder, and vanilla essence. Blend until you have a smooth batter.

Pour the batter into the lined baking tray and smooth the top using the back of a spoon.

Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the centre comes out clean.

Remove the brownie from the oven and allow to cool completely in the tin before slicing into squares.

*You can make almond flour by grounding your blanched almonds in your blender

**If you don’t have any vegan dark chocolate, use ½ cup melted cacao butter + 1tbsp cacao powder + 1tbsp maple syrup as a good substitute.

***If you are a huge chocolate lover, add 1-2 tbsp more cacao to suit your taste.
