Ravishing Raspberry Donuts – the name itself is enough to make you want to rush to the kitchen and make them.

They are so delicious and moist, which makes them very easy to eat – you won’t be able to stop at just one. What’s more, they are vegan and made with good plant-based ingredients.

Great for when friends drop in, or for when you are celebrating a special occasion (like Mother’s Day, birthday or just because..).

Ingredients (makes 12)

Dry Mixture

  • 3⁄4 cups rolled oats
  • 1⁄4 cup plain flour (or gluten free)
  • 1/3 cup frozen raspberries
  • 1⁄4 cup coconut sugar
  • 1 tsp baking powder
  • 1⁄4 tsp baking soda
  • 1⁄2 tsp sea salt

Wet Mixture

  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1⁄4 cup almond milk
  • 1⁄4 cup raspberry puree
  • 1 tsp pure vanilla extract
  • 1 flax egg (1 tbsp flax seed, 3 tbsp filtered water)

Raspberry Puree

  • 1 1/2 punnets fresh raspberries
  • 3 tbsp coconut sugar
  • 1/4 cup water

Method:

  1. Pre-heat oven to 160 degrees fan forced.
  2. Combine oats, flour, frozen raspberries in the blender and blend for 60 seconds. Remove from the blender and combine with baking soda, baking powder, coconut sugar and salt in a bowl. Put aside.
  3. Blend frozen raspberries, coconut sugar and water on auto mode or until well combined. Set aside.
  4. In the blender, add coconut oil, almond milk, 1/4 cup of the raspberry puree, vanilla extract and maple syrup. Blend for 30 seconds or until combined.
  5. Add half the dry ingredients and blend, before adding remaining dry ingredients and blending again.
  6. Finish the mixing by adding the flax egg and auto blend until mixture is well combined.
  7. Pour mixture into a piping back and split evenly among greased donut moulds.
  8. Bake in the oven for 15 minutes or until springy to touch.

Note: *Make sure to clean your SV400 Vacuum Blender between each stage. 

*Glaze*

  1. Mix 3 tbsp of raspberry puree with 1 cup of icing sugar until it forms an icing-like consistency. Dip donuts into glaze and allow to set before serving and sprinkle with desiccated coconut.
